This is another one of my favorite healthy chicken recipes and it smells so good while it’s cooking and tastes even better. It’s quick and easy to make, too!
Yesterday I used the chicken I had on hand which was thin-sliced breasts. Any type of boneless chicken will do. You can cut up thicker chicken breasts or tenders to make bite sized chicken nuggets for kids.
For different variations of this recipe, try using plain or Italian bread crumbs. I’ve used them all, but the Garlic Herb is our favorite variation.
1 pound boneless chicken breasts (any variety–tenders, thinly sliced, regular)
3 tsp olive oil
6 tbsp Garlic Herb bread crumbs
2 tbsp Panko
2 tbsp grated Parmesan cheese
salt and pepper to taste
olive oil spray
Preheat the oven to 425°. Grease a baking sheet with olive oil spray.
Put olive oil in one bowl and in a separate bowl add the bread crumbs, Panko, and Parmesan cheese. Stir to mix well.
Season chicken with salt and pepper and then dip into olive oil making sure the oil coats the chicken evenly.
Roll in the bread crumb mixture, again making sure the chicken is evenly coated, and then place on a baking sheet. As you can see in my photos, I used parchment paper instead. Either way will work just fine.
Spray the tops of the chicken breasts with olive oil spray (it will help brown the bread crumbs) and cook until done.
For thicker chicken or nuggets, bake for 8-10 minutes and then flip chicken over and bake another 4-5 minutes until done.
