This Fresh Berry Greek Yogurt Pie is an excellent healthy alternative to traditional cheesecake. I made a graham cracker crust from scratch and topped it with fresh seasonal berries. This can be made with gluten free or traditional graham crackers.
My thoughts on the gluten free diet…
I know the gluten free (GF) diet has become all the rage in the past several years, but I would never recommend doing it unless you have some health issue that would benefit from it. It’s hard. It’s expensive. And it’s very limiting when it’s done right.
Both of our boys had frequent sinus and ear infections when they were very young. And of course that meant they were on antibiotics frequently, which cleared their infections but killed their guts.
Literally and figuratively.
Antibiotics kill off the good bacteria in the gut along with any bad bacteria in the body, so in a nut shell, the immune system becomes unbalanced. Not only did they have chronic diarrhea, bloat, and gas, but they also had severe brain fog.
So we decided to put our boys on a gluten free casein free diet (no wheat, oats, rye, barley, or milk proteins) to help heal their guts.
Our results with the gluten free diet…
The gluten free casein free diet wasn’t easy and it sure as heck wasn’t fun (GF food has come a long ways since then!). However, we started seeing results in the first month of doing the gluten free casein diet. Their brain fog started to lift and their eyes seem to be more clear and focused. Melt downs started to decrease. Thank the good Lord for that is all I can say. I was one tired mama!
We also saw a miraculous improvement in speech. Our oldest had been in speech therapy for well over a year by this point with very little improvement, but within the first couple of months he was talking spontaneously with a much larger vocabulary.
To me this was a miracle. We had worked so hard and for so long with this kiddo, but his speech had remained at an 12-18 month’s old level while he was 3+ years old. And then, what seemed like overnight, the child was talking our ears off.
He went from using two word sentences to asking how a car’s engine worked to how to change a tire to the greenhouse effect on the environment… And well, he’s never shut up since then.
And now for the recipe!
Gluten Free Fresh Berry Greek Yogurt Pie
This pie is a refreshing treat without the guilt. If you prefer, you can use vanilla greek yogurt instead of the plain yogurt + honey combination. I went with what my family would enjoy most and you should, too!
- 18 golden graham crackers (The 4 section large pieces=1 cracker)
- 1/3 cup butter, melted
- 2 cups plain Greek yogurt
- 1/3 cup honey
- Fresh berries
- Preheat oven to 350 degrees.
- For the crust:
- Crush graham crackers using a food processor or in a Ziploc baggie then pour into a bowl and mix with melted butter.
- Press into pie pan and bake for 5 minutes or until golden brown and the cracker crumbs are set. Let cool completely.
- Mix honey and plain yogurt and pour into pie crust.
- Add mixed berries on top.
- Refrigerate and served cold.
This can be made with gluten free graham crackers or with traditional graham crackers according to your dietary needs. Omit the honey if you choose to use vanilla flavored greek yogurt or if you prefer the taste of plain greek yogurt to sweetened greek yogurt. Makes one 9 inch pie.
