Homemade honey almond granola…doesn’t it look delish?
Once upon a time I thought clean eating meant I had to cut out all of the good stuff. I followed the advice of some fitness gurus who were popular at the time. I cut out fresh fruits, white potatoes, white rice, and whole bunch of other things because they were considered “bad” for one reason or another.
Fortunately, I only lasted about 4 weeks on this new diet regimen before common sense kicked in. After all, how could these things be so bad when we they were full of rich nutrients that our bodies need?
And this homemade honey almond granola?
Yep, it would have been on the bad list back then, but I’m going to tell you why that train of thought is so wrong.

This homemade granola is made with old-fashioned rolled oats which digests slower and will keep you full longer than quick cook oats. They also have a lower Glycemic Index score (55) compared to quick cook oats, which have a score of 66, which means blood sugar won’t spike as much with the rolled oats.
The coconut oil and almonds provide you with good fats which are essential in keeping your heart and body healthy. Good fats can also help improve cholesterol levels and lower your risk of heart disease not to mention the effect they have on your nails, skin, and hair.
But now we come to the honey part of the recipe. You may be thinking a sugar is a sugar, right? And there’s a whole lotta honey in this recipe. In a way you are correct. A sugar is a sugar but honey is more dense and sweeter than regular table sugar so you will use less of it. In addition, it takes more energy for the body to break down honey into a usable form (as opposed to table sugar) so you actually end up absorbing fewer calories from it. When it doubt, honey wins out.

How Homemade Honey Almond Granola is made…
This is a simple and straightforward recipe I adapted from Ina Garten.
In a large mixing bowl combine the rolled oats, coconut, and almonds and mix together.
In a separate bowl whisk the coconut oil and honey together and then pour over the oat mixture.
Stir until everything is coated evenly.
Then place the mixture on a parchment lined baking sheet and bake at 350 degrees for about 35-45 minutes.
Stir occasionally so the entire mixture turns golden brown and make sure you don’t over bake it!
Remove from the oven and allow to cool, stirring occasionally to prevent the mixture from sticking together.
Store in an air tight container after it has cooled.
- 4 cups Old-Fashioned rolled oats (no quick cook oats)
- 2 cups sweetened shredded coconut
- 2 cups almonds, sliced or chopped
- 3/4 cup coconut oil, melted
- 1/2 cup good honey
- 1 cup each of assorted dried fruit (optional)
- Preheat oven to 350 degrees.
- Mix oats, coconut and almonds together in a large bowl.
- In a separate bowl, whisk the coconut oil and honey together.
- Pour the oil and honey mixture over the oats and stir together with a wooden spoon until all of the oil and nuts are coated.
- Pour onto a parchment paper covered large baking sheet.
- Bake, stirring occasionally to ensure mixture turns an even golden brown throughout.
- Total cook time 35-45 minutes depending on oven variation.
- Remove granola from oven when golden brown throughout.
- Allow to cool, stirring occasionally.
- One cooled, add dried fruit (optional) and store in air tight container.
Honey Almond Granola Parfaits
I knew my kids wouldn’t eat plain greek yogurt so I sweetened it with honey.
I mixed 2 cups of plain greek yogurt and 1/3 cup of honey, but you can sweeten it according to your tastes.
Then simply layer granola, yogurt, fresh berries and repeat until you reach the top of your dish. Chill and serve cold.
